HUDSON VALLEY DUCK

Balsamic glazed breast, wild mushroom ragout, cured venison, dehydrated tomatoes and herbed gnocchi

Char grilled, Demi glace , baby carrots and roasted Brussel sprouts

MAUI VENISON

Coffee crusted Denver leg with an avocado-cilantro cream

WAYGU BEEF

Waygu beef cheek ravioli - Tito’s vodka sauce

Rack of antelope with nueske’s bacon, sunny side quail eggs and blue cheese
